    Vinification and aging

    The 2019 Napanook is crafted with meticulous care. The grapes are hand-harvested, then destemmed and gently crushed. Fermentation takes place in stainless steel tanks, allowing for a gentle extraction of tannins. After fermentation, the wine is aged for 15 months in French oak barrels, some of which are new. This careful aging process subtly integrates the oak aromas while preserving the purity of the fruit. The result is a harmonious wine, where every sip tells the story of its terroir.
