Vinification and aging

The winemaking process for Pio Cesare - Barbaresco 2017 begins with a rigorous selection of hand-harvested grapes. The Nebbiolo grapes are destemmed and gently crushed before being fermented in stainless steel tanks, where alcoholic fermentation takes place at controlled temperatures. A long aging period of 24 months in oak barrels allows the tannins to soften and the woody aromas to integrate, while preserving the varietal character. This traditional method ensures complexity and depth in the wine, while respecting the authenticity of the terroir.
