Today, Château Canon is managed by the Wertheimer family, owners of the Chanel fashion house. Since acquiring the estate, they have invested in it to make it a model of winemaking excellence. This passion for wine and commitment to sustainability have allowed Château Canon to establish itself as one of the leading names in the Saint-Émilion appellation.

Vinification and aging

Winemaking at Château Canon is a meticulous art, blending tradition and innovation. The grapes are harvested by hand, ensuring rigorous selection. After delicate destemming, alcoholic fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. The wine is then aged in oak barrels, some of which are new, for 18 to 24 months. This process brings complexity and depth to the wine, while respecting the pure expression of the terroir.
