Owner and history

Today, the Château Canon is owned by the Wertheimer family, who have taken over the reins of the domaine with passion and commitment. Under their leadership, the domaine has experienced a spectacular renaissance, blending tradition and modernity. Their vision is to create wines that fully express the terroir of Saint-Émilion, while respecting the history and heritage of the domaine. The Wertheimer family is also committed to sustainable practices, ensuring that the beauty of this terroir is preserved for future generations.

Vinification and aging

Winemaking at Château Canon The wine is made with meticulous care. The grapes, harvested by hand, are hand-sorted to retain only the very best. Fermentation takes place in temperature-controlled vats, allowing for precise temperature control to extract the finest aromas. Aging occurs in oak barrels, some of which are renewed each year to preserve the purity of the fruit while adding a touch of elegance. This artisanal process, combined with constant attention to detail, results in wines of great complexity and remarkable longevity.
