Vinification and aging

Winemaking at Château Canon is a meticulous process, blending tradition and modernity. The grapes are carefully hand-sorted before being destemmed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. After fermentation, the wine is aged in oak barrels, some of which are new, for 12 to 18 months. This barrel aging refines the tannins and adds delicate woody notes, while preserving the expression of the fruit and terroir.
