The owners are dedicated to passing on their expertise to future generations, while integrating sustainable and environmentally responsible practices. Their vision is clear: to produce wines that tell a story—the story of their terroir and their commitment to quality.

Vinification and aging

Winemaking at Château Canon is a meticulous process, where each step is carefully considered to respect the integrity of the grapes. After a manual harvest, the bunches are meticulously sorted before being destemmed. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging occurs in oak barrels, some of which are new, to add further complexity to the wine. This aging process, which lasts approximately 18 months, gives the wine its structure and depth, while preserving the fruity and floral expression so characteristic of Château Canon.
