    Owner and history

    Domaine des Entrefaux covers 30 hectares of vineyards, a small portion of which is dedicated to white wines. Situated on predominantly clay-limestone soils, sometimes covered with rolled pebbles, this terroir imparts a vibrant freshness and a pronounced minerality to the wines. The climate, characterized by a beautiful Mediterranean influence tempered by the north wind, allows for a slow and gradual ripening of the grapes, thus preserving their natural acidity and aromatic balance. The vines are cultivated according to organic farming principles, promoting biodiversity and respecting the vine's natural cycle.

    Vinification and aging

    The white winemaking process at Domaine des Entrefaux follows a minimalist approach, allowing the terroir's typicity to be fully expressed. After hand-harvesting, the grapes are gently pressed to extract the purest must. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the freshness and primary aromas of the grape variety. The wine is then aged for 6 to 8 months on its fine lees, giving it a silky texture and enhanced complexity without adding weight to the structure.
