    Owner and history

    The Les Romains plot covers approximately 1 hectare and consists of vines that are over fifty years old. They are planted on hillsides and cultivated biodynamically on flint soil.

    Vinification and aging

    - Hand-harvested grapes
    - Fermentation with 60% new barrels, 20% one-year-old barrels and 20% two-year-old barrels, at temperatures between 18 and 24°C
    - Aged on fine lees with regular stirring for 10 to 14 months
